Our Couverture is made in France in a cooperative operation, which aims to support the development of organic agriculture and local communities in Latin America. Real criollo cacao is bought from the cooperative Pangoa, on the Peruvian Amazon plateau. There, around a hundred producers grow cocoa that has not undergone any hybridization but is allowed to maintain the cocoa's original constitution. This gives Pangoakakaon a unique quality and taste. The fact that the farmers are also paid more than double the world market price gives an even better aftertaste.
With the finest raw materials, and pangoaca cocoa as a base, they produce a whole range of different chocolate varieties. Cane sugar is used as sweetener, which is also produced by a Peruvian cooperative near Lima, but this particular variety is completely dock-free.
