Dala Lantvete is an old country variety of spring wheat from Dalarna. It is a so-called "diversity crop", which means that there is great variation on the axis both in terms of color and shape, and only some have bristles while others are without. It's really cool to see Dala Lantvete in a field just before harvest, what diversity! The product is also Ä-marked.

The flour goes well with most things; everything from buns and other breads to cakes and pancakes, but as with all cultural cereals, you should remember to be a little careful with the dough. The protein content of the flour is high and it is a good mineral composition.
