Dalavete is the earliest of the wheat varieties but also gives the lowest harvest and the best baking properties. The wheat has a very good quality with, for example, a high fall number, which makes it extra suitable for eg cakes. Feel free to mix with other flours of lower quality. We vortex grind extra fine for the best flour!
