Spelled whole

Saltås' entire spelled is produced by peeling off the hard outer shell, the spelled. Whole spelled is a whole grain product with both bran and germ left. Good cooked as rice or in a salad. You can also use boiled spelled in bread. If you have your own grain mill, you can grind your own wholemeal flour. If you want to bake with whole spelled, cook according to the basic recipe, but exclude the salt. You can then replace about 10 percent of the flour with cooked spelled. It makes the bread extra tasty!
