Spelled wheat, also known as spelled, is a very old type of wheat - a so-called cultural variety. Baking with cultivated varieties gives more flavor compared to modern wheat varieties while supporting a small-scale, sustainable agriculture. In spelled flour whole grains, both germ and bran remain, which makes the flour rich in fiber, phosphorus and zinc as well as the B vitamins thiamine and niacin.
