Four-grain crusher is a mixture of equal parts organic wheat, rye, barley and oats cut into pieces, also called "steel cut". It is a whole grain product that has both bran and germ left, which makes it rich in fiber. If you want to use a four-grain crusher in the bread baking, it should be soaked in the fridge overnight (8? 10 hours) or you make a scald. To scald, beat 1,5 dl boiling water over 1 dl crusher and let it swell for at least 3 hours. You can then replace about 20% of the flour with soaked or scalded four-grain crusher. It gives a really good and juicy bread.
