Spruce jam
Spruce shoots and a little sugar boiled into a wild jam, with a taste of resin and some acid. Use it for meat instead of jelly, or pickle salmon with it. It is fantastic for salty cheese, such as Bredsjö Hård or Svea or for a mild white mold cheese. Mix it in the ice cream batter to your own spruce shot ice cream. And feel free to drizzle a little spruce shoot oil or spruce shoot syrup over.
Origin: Högtorp farm, Mellösa, Sweden. All spruce shoots are picked by hand in their own ecologically certified forests. The sugar is white KRAVEU / non-EU sugar. The product is produced in an EU-approved production kitchen under strictly hygienic forms. It guarantees clean, safe and first-class products that are not oxidized or stored too soon.
Character: The spruce conifer jam has a clear taste of spruce, with hints of resin, some acidity and sweetness. It also has a slight chewiness left in the needles.
