Ground almond, also called tigernut or chufa internationally, is a semi-grass that produces nutritious and tasty root tubers. It forms tuft-like plant formations and usually reaches a height of 40-50 cm. There are several varieties of ground almonds, and some can be grown in Sweden, but they are sensitive to frost and usually do not survive the winter unless kept frost-free. The flowers vary in size and can be green or yellowish. Ground almonds are usually planted in April-May and harvested in autumn.

Ground almonds are one of the oldest known cultivated crops in the world, documented as early as 4000 years ago in Egypt. It is said to have arrived in Spain around 700 AD. and is now grown there commercially, especially in the area around Valencia. Ground almonds are also grown in North Africa, the United States, Mexico and parts of Asia.
