Tasty and musty, pure and unrefined whole cane sugar that is produced by boiling down the juice squeezed from sugar cane into lumps of sugar. These are then ground down to an easy-to-handle panel sugar. Panela has a lower GI than refined white sugar, and also contains smaller amounts of minerals. Perfect for baking and cooking. In recipes, you use the same amount of panela as white sugar.
