Rågkross is whole whole grain rye that has been cut into pieces, also called "steel cut". Both bran and germ remain, which makes it rich in fiber. For juicy and flavorful breads: If you want to use rye breadcrumbs in bread baking, soak it in the fridge overnight (8-10 hours) or blanch it. To scald, pour 1,5 dl of boiling water over 1 dl of crushed stone and let it stand and swell for at least 3 hours. You can then replace about 20% of the flour with soaked or scalded rye flour. It gives a really good and juicy bread.
