An award-winning mold cheese in the style of Roquefort and Stilton.
This classic mold cheese has a texture reminiscent of roquefort or, in the ripe state, gorgonzola. It smells wonderfully of stall, and tastes spicy and herbal with real saltiness and a little bitterness in the aftertaste.
Here you let the wine be the "jam" on the cheese, that is, you choose a sweet and full-bodied wine that both complements the taste experience and balances the saltiness.
Typical wine suggestions are a sweet white wine from Sauternes in France, or a red port wine. But there are plenty of suitable wines from other parts of the world as well - such as Alsace in France, Tokaj in Hungary or sweet wines from Austria, Germany and Australia. Red or white does not matter, but it should be sweet and full.
Skogsbacken Blå won a bronze medal in the Swedish Championships in Mathantverk 2012.
