Wheat flour is completely whole grain wheat that has been cut into pieces, also called "steel cut". Both bran and germ remain, which makes it rich in fiber. For juicy and tasty breads: If you want to use wheat flour in bread baking, it should be soaked in the fridge overnight (8-10 hours) or you will scald it. To scald, pour 1,5 dl of boiling water over 1 dl of crushed stone and let it stand and swell for at least 3 hours. You can then replace approx. 20% of the flour with soaked or scalded wheat flour. It gives a really good and juicy bread.
